Refrigerator Pickles

 

1 cup white vinegar

2 cups of sugar

1 tbsp salt

1 tsp celery seeds

1 tsp mustard seeds

7 cups sliced cucumbers

1 onion sliced

 

Combine vinegar, sugar, salt, celery seeds and mustard seeds on burner unti sugar disolves. 

Slice cucumbers and add to jars.

Pour above solution into jars leaving ½” at top.

Let stand at room temp for 1 week

Refrigerate.

 

Optional:  Seal jars using a water bath.  Pints 15 minutes, 20 for quarts.  Then no need to refrigerate.

 

Optional:  Add 2-3 cloves of garlic and or a hot pepper per jar.
