BREAKFAST POTATOES
 

Can also be used at other meals.

Ingredients:

4 potatoes

1/2 cup chopped onion

1/2 cup chopped red bell pepper (or green)

4 tbsp. butter

salt and pepper to taste

Directions:

Boil unpeeled potatoes for 10 minutes. 

Allow potatoes to cool and then cut them into 1/2" cubes.

Saute onion and bell pepper in butter in large skillet for about 3 minutes then add potatoes.

Cook for 5-10 minutes per side until potatoes are golden brown.
